Insalata caprese is one of my favorite salad/appetizers to make. One, it is easy. Two, fresh basil & mozzarella es muy delicioso. So why no put it on top of bread and make a delicious grilled cheese sandwich?

1/2 tomato on the vine (these were big tomatoes)
2-3 slices fresh mozzarella
8-10 fresh basil leaves (they shrink with the heat)
1/2 cup balsamic vinegar
pinch sugar
olive oil
2 slices bread (I used ciabatta)

Cook time: 20 minutes
Calories: 344 (mostly from bread)

Reduce balsamic vinegar in saucepan. For those that don’t know how to do a reduction: Bring balsamic to a boil. As soon as it begins to boil reduce heat to medium and add a pinch of sugar (1/8 tsp). Mix balsamic and sugar until the sugar dissolves. Simmer until most of vinegar has evaporated (about 8-10 minutes). Remove reduction from heat and let cool. It should have the consistency of syrup.
While the balsamic is reducing. Slice tomatoes and mozzarella to about 1/2 inch thickness. Place tomatoes on top of mozzarella and basil on top of tomatoes. Sprinkle with salt. Drizzle olive oil on top.
Heat flat pan. Lightly butter both side of bread. Toast one side bread (I like both sides toasted).
Once one side of the bread is toasted flip and add mozzarella, tomato, and basil. Drizzle balsamic reduction on top.
Toast for 1-2 minutes. Place both sides of bread together and flatten with a spatula. Toast 1-2 minutes, flip and toast other side. Toast bread until desired brownness.
