Well…not quite. These tomatoes are oven-roasted but this the easiest way I know how to make homemade sun-dried tomatoes. The recipe is quick and easy and you can dazzle your family and friends and make them think you labored for days to make this treat.

3-4 roma tomatoes
olive oil
2-3 tablespoons of fresh herb mix (oregano, thyme, basil & rosemary)

Prep time: 5 minutes
Cook time: 2 hours

Preheat oven to 250 degrees.

Slice tomatoes into 1 inch strips and remove seeds and fleshy inside. Place them on a cookie sheet or jelly roll. Drizzle each tomatoes with olive oil. Sprinkle salt, pepper, and herb mixture.

Cook tomatoes on top rack for about 2 hours or until they shrink to about half the original size.

Enjoy on top of a salad, with pasta, or whatever delicious treat you whip up!
